As a starting point I would always use Ubuntu's server edition when you want to go with Ubuntu. http://www.ubuntu.com/products/whatisubuntu/serveredition For our 'big thing in da basement' we are using Debian Etch and are planning to move to Lenny 'shortly' after the release.
