how does MPI know

Hello, I had a few doubts. In case of two NIC machine clusters, how does MPI or the OS know which NIC to use ? In case, one of the NIC's needs to be used exclusively for MPI and the other for something like NFS how do we set the NIC's to perform these functions exclusively ? Does channel bonding perform this for your or do you need to configure your MPI package to do this for you ? Any help is welcome.
